These little gems are warm, moist and flavorful with a hint of cinnamon and sweet raisins. They’re a great way to use the zucchini from your spring share you’ll be getting this Saturday.
We talked about some of the challenges of growing zucchini and shared some tips in this post, but how about some of the benefits?
Zucchini is packed with fiber, is low in calories and one cup contains a quarter of your daily vitamin C. It can be enjoyed so many ways. I love to slice it and add it to skewers for the grill, bake it with yellow squash with a bit of coconut oil and dash of salt or in zucchini muffins or bread.
